The typing speed in that video is insane O.O And he's doing it with one hand...

I doubt I could even smash random keys on a keyboard that fast.

Nope. I type faster on my 84+SE than on my mobile phone, and at least as fast on my 84+SE than on my Android device. It is just a matter of habit.

I once timed myself at 30 WPM on my TI-83 Plus, after five years of using it.

Still not used to the curved TI-84 Plus layout, but from your post it sounds like the TI-84 Plus CSE is even harder. What's different about the keypad?

Yeah for the 84+ I still have troubles getting used to the misaligned ENTER and ON keys so I often hit ENTER instead of + by mistake.

As for the CSE the problem is because the processor (15 MHz) is not fast enough for a 320x240 screen that contains 16 bits per pixels and if combined with questionable OS programming, when entering text at the bottom of the screen you get about 3 frames per second, so many keypresses get missed. When typing at the bottom it's far less bad, though, so it could be a bug.
